The views from the Hillside Pool Suites are stunning; wide panoramas of the Caribbean Sea and lush landscape that surrounds the hotel. The dense foliage and flowering climbers around each suite shield the private sundeck and plunge pool, proving optimal privacy for our guests. Each hillside suite has a spacious, wrap-around covered deck, complete with sun-loungers, double day bed, sofa, small dining table and plantation chairs. The Hillside Suites are built to a standard size and carefully positioned on the hill behind the beach to maximise the view and privacy of its occupants.
Our Beachfront Suites stand right on the soft white sand of Hermitage Bay itself, with unobstructed views of the Caribbean Sea. Each room has a spacious, split-level, open-plan living and sleeping area, ensuite bathroom, outdoor shower and covered sun-deck with a small dining area, double day bed and plantation chairs. The rooms span the length of the beach, with some just a few steps from the pool, lounge and restaurant and others further down, offering more privacy.
The Garden Suites are identical to the Beachfront Suites in every way, apart from being situated one row back from the beach. They are positioned in between the Beachfront Suites, affording partial sea views from the verandah. Each room has a spacious, split-level, open-plan living and sleeping area, ensuite bathroom, outdoor shower and covered sun-deck with a small dining area, double day bed and plantation chairs.
Restaurants and Bars
At Hermitage Bay we want to serve you delicious meals made with the best, freshest and highest quality ingredients. Our Executive Chef, Desroy Spence, and his team in the kitchen deliver a 5-star varied menu, mixing the best of Modern European cuisine with Caribbean favourites and American classics.
Menus change daily and there is always an opportunity to try something new. We use locally-sourced produce wherever possible, ensuring that we only have the freshest ingredients, as well as reducing food miles and supporting local businesses. Quite a large portion of the fruit and vegetables we use is now grown in our very own organic garden.
We are proud of the food we serve and we think you will find it one of the highlights of your stay.
For dinner, the restaurant transforms into a more formal dining area with subtle lighting, candles and drapery. There is live music every night and the beat of steel drums, calypso or jazz accompanies the natural orchestra of the waves rolling onto the beach.
We always serve delicious meals made with the best, freshest and highest quality ingredients. Watch Kempton Mccalmont, our F&B supervisor at Hermitage Bay (and our Green Team leader), introduce you to some of our fresh food experiences that we offer.
The lounge area is right next to the beach and pool and is a great place to unwind with a cocktail, a cup of tea or a good book. Have lunch there if you prefer a slightly less formal feel.
In the evening, it is candle-lit and atmospheric – the place to gather for drinks, canapés and coffees (and even dancing) before or after dinner.
Take breakfast, lunch or dinner on our beautiful patio, under the shady almond trees right on the beach.
For special occasions we offer a secluded, candle-lit dinner for you and your partner right at the water’s edge on the beach or on your own private terrace. A personal, dedicated waiter will take care of you throughout your special evening.
ORGANIC KITCHEN GARDEN
Hermitage Bay’s organic kitchen garden is going from strength to strength having doubled in size since we started, and we are growing crops such as peppers, tomatoes, spinach. callaloo, aubergine (egg plant), okra and cucumbers (boy did we have a lot of cucumbers at first!) and herbs such as thyme, parsley, coriander and basil.
We expect to expand this list as we learn and develop our expertise. Our organic gardener, Kempton, is also a supervisor in the restaurant so if you ever want to hear about the project or take a guided tour with him, do please just ask.
Amenities and Activities
Hermitage Bay provides the ultimate in rest and relaxation, but for those wanting to experience a little more of the island, a selection of the activities are available. Some activities/tours are available for additional charge.
The following non-motorised watersports are available at Hermitage Bay: snorkeling, windsurfing, kayaking, paddle boards, hobie cats and sunfish. Our friendly watersports team offers instruction or just general help to all guests. Snorkeling equipment is provided free of charge.
MEDITATION, YOGA & PILATES
A 75 minute complimentary Yoga and Meditation class takes place on the Spa Deck on alternate mornings. A 1 hour complimentary Pilates class takes place on the Spa Deck on alternate mornings. You may also book individual Yoga, Pilates, and/or Meditation sessions to be enjoyed at your leisure for an additional fee.
We now offer guests a cooking course/demonstration once a week, outdoors, on the deck by the main pool. These courses support our philosophy of recognising how important food is to everyone’s enjoyment of their holiday but adds the fun of cooking with local produce, some of which comes from our organic kitchen garden, under the guidance of one of our fantastic chefs. Although there is no charge, we prefer guests to book in advance but you can just turn up and join in if it takes your fancy.
For those guests that are interested in where the food on their plates comes from, we offer a guided tour of the farm of one of our local fruit and vegetable suppliers. The farmer’s name is Mr Christian and he, like his father before him, has been growing tropical produce all his life. He supplies us directly but also sells a good portion of his production each week at the Saturday morning market in a in St. Johns. The market is well worth a visit but you have to be an early riser since it starts at around 4am!
